4 ingredient, healthy, & high-protein snickers are a must-try! Snickers were by far my favorite candy as a child, they were the jackpot on Halloween, but they are filled with unhealthy ingredients. This remake is a healthy version that uses only 4 ingredients: PB2, Peanut butter, Peanuts, & Vegan Dark Chocolate, & thats it!

This Snickers bar is high in protein, as we swap regular peanut butter for Peanutbutter protein powder, which helps reduce the fat and calorie content, while still delivering the same creamy texture and flavor. The peanut butter powder also holds up better than regular peanut butter in the freezer. While regular nut butter tends to get extremely hard in the freezer, the peanut butter powder mixture stays nice and gooey giving you that solid crunchy chocolate outside with a creamy and soft inside.

A regular Snickers bar contains sugar, corn syrup, palm oil, & artificial flavoring, all ingredients that promote inflammatory states in the body. Palm oil is a high oleic seed oil that is toxic to our bodies, to read more about seed oils read my page on which oils to include in your diet.

How to store these snickers bars

I like to store these bars in the freezer, especially in the summer for a nice cool treat. They will also last longer if you store them in the freezer. If you want a nice chewy bar inside and out, I suggest taking a bar out of the freezer 10-15 minutes before eating it to let it soften.

These minimal-ingredient Raw Vegan protein Snickers bars are a great post work out snack, or afternoon treat that will not spike your blood sugar or give you a crash like a regular Snickers would. They take just a few minutes to make and no baking is required.

Instructions

To prepare the base
  1. Cover a 9x9 pan with parchment paper
  2. Place your dates, peanut butter powder, vanilla, and cinnamon if using, into a food processor and blend until a powder forms. Add 1 tbsp water or nut milk and blend more. Continue to add 1 tbsp of water or nut milk at a time until a dough-like ball forms.
  3. Press the dough into the bottom of the pan to form your first layer.
  4. Place in the freezer to set for at least 20 minutes
To prepare the creamy filling
  1. Place 2 cups peanut butter powder and 2 scoops protein powder of choice in a bowl and stir to combine. Add 1/2 cup water and stir until a creamy peanut butter-like consistency is formed. Continue to add 1 tbsp of water at a time until you reach the perfect thick but creamy consistency.
  2. Spread the filling over your base layer and top with roasted peanuts.
  3. Place back in the freezer to harden for at least 2 hours.
The Finishing touch
  1. While the filling is setting in the freezer, melt 2 cups of dark chocolate over a double boiler. Optional: Add 1 tsp of coconut oil to help thin out the consistency of the chocolate.
  2. Once the base is set, cut it into even rectangles, and dip each piece in the melted chocolate. Place parchment paper on a cookie sheet and put it back in the freezer to set for about 30 minutes. Enjoy!
