Chickpeas are a great neutral bean to add to your diet, and they are a great source of soluble fiber. These cookies are only 55 calories each with only 2 grams of sugar!Thats unbeatable for a cookie! They also have only 5 ingredients and take no time at all to make!

As I sit on my couch writing this blog post, I actually am enjoying one of these cookies right now! (mine is frozen because I love a good frozen cookie)! These take 5 minutes to make and are too delicious (and healthy) not to try. You can bake them into cookies or enjoy the batter raw! They are also:

Customize these cookies

  • Melt your chocolate chips and dip them in chocolate instead for a fun customization

  • Swap the nut butter Feel free to use sunflower butter instead to make these nut free!

  • Add protein powder for an extra boost of protein

  • Add Cacao powder for added polyphenols and a double chocolate flavor!

  • Add raisins and 1 cup of rolled oats for an oatmeal raisin variation.

How to Store Cookies:

  • Store these cookies in the fridge for up to 7 days, and freeze any leftovers to defrost for when you need a quick snack!

  • I Love these frozen, so freeze them and enjoy them nice and cold and crunchy right out of the freezer!

  • Keep in a jar raw for a delicious cookie dough

These 5 ingredient vegan chickpea cookies are almost too delicious to believe that they are actually healthy. With only 50 calories and 2 grams of sugar, these cookies are the perfect mid-day pick-me-up without the glucose spike!

Instructions

  1. First, preheat your oven to 350 degrees. Then mix your peanut butter powder and water until you form a nice paste. You may need to add extra water - if so just add water 1 tbsp at a time until you get a nice smooth and creamy consistency similar to a newly opened jar of drippy peanut butter.
  2. Combine all your ingredients in a food processor or high-speed blender and blend until smooth. Mix in your chocolate chips.
  3. Place your cookies on the cookie sheet and press them down with a fork. Bake for 10- 12 minutes or until golden brown. You can either bake all the cookies or save some of the cookie dough in the fridge to eat as is!
  4. Store in the fridge for up to 7 days, or freeze! If you like a frozen treat -They taste amazing frozen! If you want to also freeze them right away and thaw them for a couple of minutes before eating cold.
