Protein Chocolate Mousse
- Place chocolate chips in a microwave-safe bowl and microwave for 30-second intervals, string chocolate in between until melted.
- Once the chocolate Is fully melted add 1 tbsp of boiling water and stir. Once the chocolate and water have mixed completely add 1 scoop of protein powder.
For the Chia Pudding
- Place the chocolate mousse in the bottom of a glass jar or bowl and press down.
- Pour 1 cup of nut milk over the chocolate mouse.
- Add chia seeds and maple syrup, honey or monkfruit for keto
- Stir together the mixture, making sure not to disturb your chocolate mousse on the bottom. This will give your chia pudding a nice surprise at the end. Add berries or any other toppings your heart desires.
- Place in the fridge for 8 overs or overnight until the mixture has thickened.
- Serve cold and Enjoy!
Notes
If you want to enjoy this chia pudding right away, make the chia pudding on the stove and boil the mixture to help the chia seeds quickly absorb the liquid. This takes about 10 minutes total. Place the chia seeds milk and sweetener mixture on the stove over medium heat, when the mixture begins to boil lower the heat and simmer for 5 minutes. If your mixture becomes too thick add more milk 1 tbsp at a time until reached desired consistency.
