These delicious and filling air fried falafel is a great source of vegan protein to meal prep for your week of lunches, or serve as a delicious topping for a greek salad or mezze plater. Chickpeas are a great source of fiber filled protein. If time allows, soaking and sprouting your chickpeas prior to preparing this dish will increase their nutritional benefits and make them easier to digest. This amazing, healthy, high protein falafel is full of flavor and the perfect recipe to make ahead of time so you can throw them in salads for lunch all week, or freeze them to save for when you need a quick meal.

Ingredients

Garlic & Dill Yogurt Sauce

Instructions

Falafel Instructions
  1. Rinse chickpeas and then lay them out on a kitchen towel to dry.
  2. Place the onions and garlic in the bowl of a food processor and pulse until roughly chopped.
  3. Add in the parsley, cilantro, scallions, cumin, salt, red pepper flakes and mustard and process until blended (30-60 seconds).
  4. Add the chickpeas and pulse until chopped and blended but not pureed.
  5. Sprinkle in the baking powder and flour and pulse a few times until incorporated.
  6. Transfer to a bowl and refrigerate covered for at least 1 hour.
  7. Preheat air fryer to 350F.
  8. Remove the chilled falafel batter from the refrigerator and roll into 1" balls.
  9. Brush the bottom of the air fryer with olive oil. Place the falafel balls in the air fryer and cook for 20 minutes or until golden brown, turning half way through.
Garlic & Dill Yogurt Sauce
  1. Place all ingredients in a mixing bowl and mix to combine. Add salt to taste.

Notes

Refrigerate for ip to 4 days. Freeze uncooked balls for up to 6 months. Defrost in the refrigerator overnight before air frying.
