Unlike processed white bread, sweet potatoes are filled with vitamins and nutrients. They are incredibly rich in beta-carotene, which converts into Vitamin A in your body and is great for eyesight. This sweet potatoes toast recipe is super easy to make and is great for a quick meal-prep breakfast or to trade out your lunch sandwich bread! The possibilities are endless, but here are four ways to make this healthy breakfast or snack:

Ingredients

SWEET POTATO TOAST
  • 1 Large Sweet Potatoe (or as many as you would like)
  • 1 tbs Olive Oil/ Coconut Oil / Avocado Oil
SWEET & SPICY AVOCADO TOPPING
  • 1 Ripe Avacado
  • 1/2 fresh lemon or lime juice
  • 1 Tbs Organic Local Honey (I love Beekeepers Naturals)
  • 1 Tsp Red Chilli Flakes for topping
  • Organic Broccoli Sprouts for topping
CHOCOLATE MACA STRAWBERRY TOPPING
  • Fresh sliced Strawberries
  • Nut Butter Of Choice (I used hazelnut butter)
  • Cocao Nibs for Topping
  • 1 Tsp Maca Powder
WILD MUSHROOM & COCONUT YOGURT TOPPING
  • 1 package Gourmet Mushroom Mix
  • 1/2 Cup Organic Coconut Yogurt (I like Cocojune)
  • 1 Tsp Olive Oil
  • Fresh Garlic
  • Dill for topping

Instructions

To Prepare the Toast Base
  1. Preheat oven to 350℉.
  2. Place a wire rack on a large rimmed baking sheet.
  3. Trim both ends from the sweet potato using a knife.
  4. Slice sweet potato lengthwise into 1/4-inch thick slabs using a knife or mandolin slicer.
  5. Brushed Slices with a light layer of coconut or olive oil.
  6. Arrange slices in a single layer on a cookie sheet or wire wrack.
  7. Bake for 15-20 minutes or until potatoes are tender but not fully cooked (watch to be sure they don’t burn!)
  8. Remove pan from oven and allow potatoes to cool on a wire rack completely before transferring to a glass storage container. Store in the fridge for up to 5 days.
To Make the Toast
  1. Place the desired number of sweet potato slices into a toaster or toaster oven. Toast until hot and edges are crispy. The length of toasting time required will depend on your toaster.
SWEET & SPICY AVOCADO TOPPING
  1. Place avocado in a bowl and add a squeeze of lemon or lime juice and a pinch of salt and smash with a fork.
  2. Spread mashed avocado evenly onto toasts.
  3. Top with a drizzle of Honey, red pepper flakes, and sprouts, enjoy!
CHOCOLATE MACA STRAWBERRY TOPPING
  1. Take 2 Tbsp desired Nut butter and spread evenly over toasts.
  2. Slice fresh strawberries and layer on top.
  3. Sprinkle with cacao nibs and maca powder.
WILD MUSHROOM & COCONUT YOGURT TOPPING
  1. Place a cast-iron skillet and 1 tsp olive oil in a pan over medium heat.
  2. Add wild/ gourmet mushroom melody to the pre-heated pan and cook for 4 minutes or until mushrooms are cooked through.
  3. Add garlic and salt to the pan and cook for an additional 3 minutes.
  4. Spread Coconut Yogurt evenly over toast.
  5. Add sauteed wild mushrooms, and sprinkle with fresh dill to season.
