Sweet Ginger Garlic Soy Gourmet Mushrooms
Mushrooms are one of my favorite foods. They make a great meat alternative with there deep umami flavor. They are filled with tons of nutritional benefits, and can even grow in your own home, and my favorite food is food you can grow in your own home!
For this recipe, I combined organic beach, crimini, shitake, king trumpet and lion's mane.

Cooking with Shrooms
One mistake people often make when cooking with mushrooms is washing them with water. The best way to clean your mushrooms is to:
Buy organic mushrooms to ensure the best quality and reduce pesticides.
Use a dry towel or brush to brush off any dirt on your mushrooms.
Mushrooms tend to soak up and retain water if you rinse them. This can make them a bit slimy when cooking, the best way to get a perfectly golden mushroom with a perfect texture - skip the rinsing.
Sweet Ginger Garlic Soy Gourmet Mushrooms

Ingredients
Instructions
- Preheat the oven to 400ºF
- Clean and prep mushrooms, toss in avocado oil, then transfer to a roasting dish
- Roast in oven for 10 minutes. Stir and flip mushrooms and roast for 10-15 minutes depending on size and desired tenderness.
- Combine tamari, garlic, ginger, honey, and sesame seeds in a bowl and stir to combine
- Remove mushrooms from oven and pour mixture over mushrooms and toss to coat, add salt and pepper to taste. Sprinkle sesame seeds over the top and serve.
