Chocolate Covered Dates Stuffed w. Soaked & Dehydrated Pecans
Cacao contains one of the highest antioxidant contents of any food on the planet, as well as high levels of magnesium and iron. It also helps give you energy from theobromine compounds, an alkaloid similar to caffeine that can increase alertness and boost your mood. Cacao is associated with elevated mood and blissfulness because of its natural compounds like anandamide, which promote heightened sensitivity and feelings of euphoria. It also contains the essential amino acid tryptophan: a precursor for serotonin, which is the neurotransmitter responsible for feelings of happiness!
Personally, I love pecans, but you can really experiment and get creative with the different types of nuts you choose to put inside your dates. Try Peanut or almond butter for an authentic snickers flavor, or sunflower or coconut butter for a nut free version. Hazelnuts are also delcious and add a true nutty flavor.
Dates on the other hand are extremely rich in soluble and insoluble fiber and used in many cultures as a daily addition to the diet in order to help with bowel movements. They also contain essential amino acids and carotenoids which are great for vision and eyesight. Snickers and Twix don’t have any of these benefits….
Pecan Stuffed Chocolate Covered Dates - Natures Candy

Ingredients
Instructions
- Slit the dates open and remove the pits.
- Place nut inside the date where the pit was (or sunflower butter for nut-free)
- Melt the chocolate over a double boiler until completely melted - stir throughout to keep it from burning. (For microwave, put chocolate in the microwave for 30-second intervals - stirring in between each)
- Spread the stuffed dates out on a piece of parchment paper. Pur the melted chocolate over each date, or for a cleaner look, dip each date in the melted chocolate.
- Sprinkle salt ontop.
- Place dates in the freezer until the chocolate has hardened. Store in the refrigerator or the freezer and enjoy cold.
